85% Chenin Blanc (Lepard Vineyards)
10% Pinot Noir
5% Chardonnay
Chenin Blanc is a wonderful varietal to use for the production of sparkling wine. Its delicate melon and floral notes are easy to recognize, and the small addition of Chardonnay and Pinot Noir bring a rich dynamic to the otherwise tantalizing fruitiness that this cuvèe shows. This wine has a subtle yeastiness, due in part to the 12 months of extended lees aging that we did on the wine prior to final filtration and bottling. Effervescent and crisp, this wine has all the attributes of classic sparkling wine, and is refreshingly nuanced with very pretty fruit notes from all three of the varietals used in the blend. Finished at 1% residual sugar, this Brut is classic in style and texture, showing just the right balance between dry and crisp to lush and silky. Never has a Texas sparkling wine been so amazing as it captures the senses and rejuvenates the spirit with each sip. Enjoy this sparkling wine with mild cheeses, light seafoods, fried chicken or on its own. Carter Creek Brut is always ready for a good time.
